Watermelon Pico Jam Backstory

I love trying to figure out how jam things. One fun story… We have an industrial business in South Carolina and I love to visit there. It’s near the Charleston area and one of my favorite restaurants is called Rita’s. It’s on Foley Beach and they serve the best pork nachos ever. The nachos have their famous watermelon pico on them. If I ever get a chance to take friends or family there, I always tell them we have to go get those nachos! You have to try them!! It’s funny because I have dreamed of that pico so I decided I was going to make watermelon pico jam and try to preserve that flavor! Well, I did and it is now one of our beloved summer jams!! My father-in-law has grown watermelons in our garden for the past couple years so it’s always fun to take the Indiana watermelon and a favorite food from Charleston and make it come together for a special jam to share! Watermelon Pico Jam goes well with charcuterie trays, veggies, cheese, toast, biscuits, crackers, pita chips.
